Healthy apple tart juicy & made fast

What to do if you simply have too many apples left? Of course, make them all into a delicious apple tart. The recipe is super easy and quick to prepare. So if you have a few apples left, then maybe that would be something for a cosy coffee afternoon? When selecting the ingredients, I focused on the essentials for the preparation, namely apples. That’s why the topping consists only of apples to which a strong pinch of cinnamon is added. Apple and cinnamon are always a win-win combination. In addition, by adding cinnamon you can save yourself any further sweetening of the apples, because cinnamon sweetens and refines food in a completely natural way.

The tart itself is baked in two steps. Why? So that the dough becomes perfectly juicy. Otherwise, the result would simply have been too dry. That’s why I poured an apple juice and caramel sauce over the pre-baked tart in the second step. Thus the final result remains unbelievably moist. Everything else doesn’t work in my opinion. Unless you put an incredible amount of butter on the tart. And don’t worry. Nevertheless, the recipe is made super fast.

I’m sure you’ll love the result in anyway, also because the tart contains only a minimum of sugar whole cane sugar (you can also use coconut blossom sugar). As I said, the natural sweetening power can be easily regulated by adding cinnamon. Cinnamon is also a natural appetite suppressant. It’s great to be able to combine the pleasant with the useful, right?

Warm from the oven, the tart tastes best. Logical, isn’t it? And it tastes even better accomplished by a delicious scoop of ice cream. I didn’t have a scoop of ice cream to hand for the photo, but you’ll find a delicious healthy recipe for making your own cinamon ice cream here.

  • 200 g wholemeal spelt flour
  • 80 g cold butter cut into small pieces
  • 1 ecological egg
  • 20 g whole cane or coconut blossom sugar
  • 1 pinch salt
  • 5-6 apples
  • 1 tbsp cinamon
  • 1 lemon
  • 200 ml apple juice
  • 1-2 tbsp whole cane sugar


  • Put the flour, sugar and salt in a bowl and mix. Stir the egg and add the butter pieces. Knead everything into a dough using your hands. If the dough appears a little too dry, you can add 1-2 tbsp of cold water. Shape the dough into a ball, wrap in cling film and put it in the fridge for about 30 minutes. 
  • Preheat the oven to 200 degrees. Wash, peel and quarter the apples and cut them into even slices. Place the apple pieces in a bowl, sprinkle with lemon juice and add a pinch of cinnamon. 
  • Grease the tart form with a little butter. Roll out the dough on a floured work surface and line the form evenly with it. Press the dough lightly with your hands and spread the apple slices on top. Bake the tart for about 20 minutes.
  • Caramelise the sugar in a pot at medium heat. Add the apple juice and let it boil down lightly. Take the tart out of the oven and spread the apple sauce evenly over it. Bake the tart for another 5 minutes and then enjoy immediately. A ball of cinnamon ice cream goes well with this.


The recipe requires a small tart form with a diameter of approx. 16 cm.
